Crazy Cajun Steelhead Trout
- 2 lbs Steelhead Trout
- 2 tbsp olive oil
- salt and pepper
- Cajun seasoning
- 1 cup flour
Crazy Cajun Sauce
- 1 tsp butter
- 1 cup heavy cream
- 1 tsp Cajun spice
- 1-2 tsp honey
- salt and pepper
- Heat pan to a moderate heat with olive oil
- Season Steelhead trout with salt and pepper
- Mix the flour and Cajun spice together
- Coat fish with spice flour blend on both sides
- Place the Steelhead in pan and cook for 4 minutes both sides
- Remove fish from pan.
Crazy Cajun Sauce
- Heat butter in a pan until melted.
- Add Cajun spice & cook for 60 seconds
- Add honey
- Add the cream and reduce for 3-4 minutes.
Serve with rice or couscous. Place starch on the middle of the place. Place fish on top. Add sauce over the fish. Serve with Riesling or Gewürztraminer white wine.
